Ingredients

  • 1 lb ground beef

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 2 medium carrots, peeled and diced

  • 2 medium potatoes, peeled and diced

  • 1 c whole milk

  • 1 c heavy cream

  • 2 c shredded cheddar cheese, to be divided

  • 2 Tbsp butter

  • 2 Tbsp flour

  • 1 tsp Dijon mustard

  • 1/2 tsp smoked paprika

  • 1/2 tsp ground black pepper

  • 1 tsp salt (adjust to taste)

  • 1/2 c diced dill pickles (optional but adds a great tangy crunch)

  • 1/4 c crumbled bacon (for garnish)

  • fresh parsley or green onions, chopped (for garnish)

Directions

  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned and cooked through. Drain any excess fat and set the beef aside.
