  • 8 oz boneless, skinless chicken breasts, cut into 2-inch cubes

  • 18 squares sweet green pepper

  • 18 pineapple chunks (fresh or canned)

  • 18 cherry tomatoes

  • 3 Tbsp lemon juice

  • 2 Tbsp water

  • 1 Tbsp vegetable oil

  • 2 tsp sesame oil

  • 1.5 tsp red wine vinegar

  • 4 tsp brown sugar

  • 1 tsp minced gingerroot (or ¼ tsp ground ginger)

  • 1/2 tsp ground coriander

  • 1/2 tsp ground fennel seeds (optional)
