Ingredients

  • 5 c crushed raspberries

  • 7 c sugar

  • 5 oz finely grated unsweetened dark baking chocolate

  • 1 pkg (57 g) powdered pectin

Directions

  • In a large pot, combine the raspberries and pectin.
  • Stirring constantly, heat until the mixture is hot enough to melt chocolate. Remove from heat and add the grated chocolate a little at a time, stirring after each addition until the chocolate is melted.***
  • Return to heat and, stirring continuously, bring to a full boil.
  • Add sugar, return to heat and bring to a full boil while stirring continuously.
  • Boil hard for 1 minute, stirring constantly to prevent sticking.
  • Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace
  • Wipe the rims of the jars clean, place the lids on, and secure the bands.
  • Process the jars in a boiling water bath for 10 minutes.

  • ***Adding grated chocolate a little at a time is essential to ensure it melts evenly and incorporates smoothly into the hot jam. This gradual addition prevents the chocolate from clumping or seizing, which can happen if it’s added all at once.
