These Crockpot Pork Chops Save Dinner—and Maybe Your Sanity

You ever look at the clock and realize dinner should’ve started an hour ago, but you still have no clue what you’re making? Or maybe you’ve got pork chops thawed, staring at you from the counter like, “Well?”

Been there. These crock pot pork chops are my go-to solution when I want a real meal, but I don’t want to babysit a pan or heat up the whole kitchen.

Plus, they’re not just “another pork chop dinner.” This one’s got a creamy mushroom gravy that feels fancy without actually being fancy. It basically cooks itself while you get stuff done—or forget about it entirely until the smell reminds you how smart you are.

Why These Crockpot Pork Chops Are Actually Different

You’ve probably seen versions of this recipe before. A can of mushroom soup, some pork, call it a day. But this version upgrades them without adding any stress.

What makes this version better?

  • Two kinds of condensed soup (mushroom + chicken) for more flavor depth
  • A touch of beef broth and Worcestershire sauce to cut the richness and balance the creamy stuff
  • Fresh mushrooms and onions so it doesn’t feel like you’re eating a plate of canned goo
  • Sour cream, for even more creamy richness
  • And a little optional cream cheese if you want the gravy extra smooth and decadent

You can toss everything in the crockpot in the morning, and by dinner, the pork is falling-apart tender and the gravy is begging for mashed potatoes. Or rice. Or just a spoon.

The Beauty of a Dump-and-Forget Dinner

Look, I cook a lot, but even I have days where I need food to handle itself. The slow cooker is that quiet kitchen assistant that doesn’t roll its eyes when you’re late starting dinner.

Here’s what I like most about this one: you don’t have to be perfect. If you skip searing the pork chops because your toddler’s melting down or the dog just ate a sock—fine. The flavor still turns out solid. (Though, to be fair, the sear does give the dish a little more oomph.)

You can use bone-in chops or boneless. Thick or thin. Whatever you’ve got in the freezer. And if you don’t have cream of chicken soup? Use two mushroom soups. You’re the boss here.

Tips for Perfect Slow Cooker Pork Chops (Even If You’re Distracted)

A few things I’ve learned after making this a dozen times:

  • Don’t stack the chops too tightly. If they’re packed in like sardines, they’ll cook unevenly. Spread ’em out in a single layer or at least overlap them loosely.
  • Go easy on the salt. The soups and broth already pack in a lot. Taste before adding more later.
  • Low and slow is key. You can do this on high for 3-4 hours, but low for 6-7 gives the pork more time to break down and soak in all that gravy flavor.
  • Gravy too thin? Leave the lid off for the last 30 minutes, or stir in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water).
  • Gravy too thick? Stir in a splash of milk or broth right before serving.
  • Forgot to thaw the pork chops? I mean… not ideal, but if they’re not one big frozen brick, you can still throw them in. Just add 1-2 hours to the cooking time. This also means you can’t sear them before placing them in the slow cooker, but that’s an ok way to do it too.
  • Other pork cuts work too! The last time I made this I used very poorly cut pork sirloin (it was on sale); you can use pork loin, pork butt, pork chops, pork stew – anything works, really.

Make It Your Own

The nice thing about this recipe is you can tweak it without wrecking dinner. Want a little kick? Add some chili flakes or a spoonful of Dijon mustard to the gravy.

Feeding a crowd? Double the sauce, add more chops, and make sure everything fits in the slow cooker. You’ll need a bigger one (6–8 qt) for that kind of operation.

Want it dairy-free? Skip the cream cheese and sour cream (or use dairy free versions, if that’s your thing), and use dairy-free condensed soups (yep, they exist now!).

No mushrooms in the fridge? You can skip them. Or sub in frozen ones. Or canned. This recipe doesn’t judge.

What to Serve With It (Besides a Fork)

The gravy is the star, so pick something that’ll soak it up.

  • Mashed potatoes (obviously)
  • White rice or buttered egg noodles
  • Steamed broccoli, green beans, or roasted carrots
  • A simple side salad, if you’re feelin’ fancy

This recipe also works great for leftovers. Shred up the pork, mix with leftover gravy, and serve it over toast, biscuits, or even baked potatoes the next day. Kinda amazing how many ways this dish stretches.

My Crockpot Pork Chops with Mushroom Gravy Recipe

Ingredients List

Here’s what you’ll need for one of the best slow cooker pork chop dinners out there:

  • 4-6 bone-in pork chops (about ¾-inch thick)
  • Salt + pepper, to taste
  • ½ tsp paprika
  • 1 tsp garlic powder
  • ½ tsp dried thyme
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 2 cups mushrooms, sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream
  • ¾ cup beef broth (low sodium is best)
  • 1 tbsp Worcestershire sauce
  • 4 oz cream cheese (optional, but delicious)
  • Fresh parsley or thyme for garnish

How to Pull It Off

  1. Season + Sear the pork chops with salt and pepper. Brown in a pan with olive oil (or skip this if you’re in a rush).
  2. Layer onions + mushrooms in the bottom of your slow cooker. Add the chops on top.
  3. Mix up the sauce. Combine both paprika, garlic powder, dried thyme and both soups, broth, sour cream, and Worcestershire. Pour it over everything.
  4. Top with cream cheese cubes, if using.
  5. Cover + cook on low for 6-7 hours, or until pork is super tender.
  6. Stir the gravy to melt in the cream cheese and blend the flavors. Serve with sides and enjoy.

One More Thing…

This one’s not going to win any awards for plating. But what it will do is bring people to the table. It’s the kind of meal that makes folks ask for seconds without looking up from their plate. And when everyone’s full and happy, the last thing they care about is how many ingredients came from a can.

So next time you’re staring at a pack of pork chops and wondering what to do with them—try this. It’s easy, budget-friendly, and ridiculously tasty.

Let me know if you make it! I’d love to hear what sides you served or how you tweaked it to make it yours.
