Ingredients

  • 2 Tbsp unsalted butter

  • 1 Tbsp olive oil

  • 1,5 lbs pounds boneless, skinless chicken thighs or breasts, cut into 1-inch pieces

  • Salt and freshly ground black pepper, to taste

  • 1 tsp Italian seasoning

  • 1 medium yellow onion, diced

  • 2 cloves garlic, minced

  • 2 medium carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 1 lb Yukon Gold potatoes, peeled and diced

  • 1/2 c frozen peas

  • 1/2 c frozen corn

  • 1/4 c all-purpose flour

  • 4 c chicken broth

  • 1 c heavy cream

  • 1 tsp chopped fresh thyme leaves (or 1/2 teaspoon dried thyme)

  • 1 bay leaf

  • Fresh parsley, chopped (for garnish)

Directions

  • In a large pot or Dutch oven, heat the olive oil and 1 tablespoon of butter over medium-high heat.
  • Season the chicken pieces with salt, pepper, and Italian seasoning.
