Ingredients

  • 2 lbs pounds beef stew meat, cut into 1-inch cubes

  • 1/4 c all-purpose flour

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 3 Tbsp olive oil

  • 4 c beef broth

  • 1 Tbsp Worcestershire sauce

  • 2 Tbsp tomato paste

  • 1 tsp dried rosemary

  • 1 tsp dried thyme

  • 2 bay leaves

  • 4 large carrots, peeled and cut into bite-sized pieces

  • 4 medium potatoes, cut into 1-inch cubes

  • 1 large onion, diced

  • 2 celery stalks, diced

  • 1 c frozen peas

  • 2 Tbsp cornstarch

  • 4 Tbsp water

  • fresh parsley, chopped (for garnish)

Directions

  • In a large bowl, combine flour, garlic powder, onion powder, salt, and black pepper.
  • Add beef cubes to the bowl and toss until evenly coated.
  • Sear the beef (optional): In a large skillet, heat olive oil over medium-high heat. Add the coated beef cubes in batches, searing each side until browned (about 2-3 minutes per side). Transfer seared beef to the slow cooker.
  • Add diced onion and celery on top of the beef.
  • Layer the carrots and potatoes over the onions and celery. Add the bay leaves on top.
  • In a separate bowl, whisk together beef broth, Worcestershire sauce, tomato paste, rosemary, and thyme.
  • Pour the broth mixture over the meat and vegetables in the slow cooker.
  • Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until the beef and vegetables are tender.
  • About 30 minutes before serving, stir in the frozen peas.
  • In a small bowl, mix cornstarch and water to create a slurry.
  • Stir the cornstarch slurry into the stew to thicken the broth to your desired consistency (you may not need to use all of it).
  • Cover and continue cooking for the remaining 30 minutes.
