Cooking Tips for Perfect Bacon Wrapped Scallops

While the concept is simple, there are a few things to consider to make sure the bacon crisps up without overcooking the scallops.

These cooking tips to help you achieve crispy bacon and perfectly tender scallops every time—making sure your dish is as impressive as it is delicious.

  • Dry the Scallops: Removing excess moisture helps them sear properly and prevents them from becoming rubbery.
  • Choose Thick Scallops: Large sea scallops work best for wrapping and cooking evenly.
  • Crispy Bacon Hack: If you like your bacon extra crispy, partially cook it before wrapping the scallops. Be careful not to overcook, as it still needs to be pliable enough to wrap around the scallops.
  • Use Toothpicks: Make sure to soak the toothpicks in water for 10 minutes before using to prevent them from burning in the oven.

Serving Suggestions

Bacon-wrapped scallops are delicious on their own, but you can elevate the dish with simple accompaniments:

  • Dipping Sauce: Cocktail sauce is a classic choice, but you could also try a tangy honey mustard, garlic aioli, or sriracha mayo for variety.
  • Garnishes: Add a pop of color and flavor with chopped fresh herbs like parsley, dill, or chives.
  • Plating: Serve on a bed of mixed greens for a fresh, vibrant presentation.

Recipe Variations

Bacon-wrapped scallops are already a classic, but adding your own twist can make them even more exciting. These simple variations will take this dish to the next level while keeping it easy and delicious.

  • Maple Glaze: Brush the bacon with maple syrup or honey before baking for a sweet and savory twist.
  • Spicy Kick: Sprinkle the scallops with cayenne pepper or smoked paprika before wrapping for a bit of heat.
  • Herb-Infused: Add a sprig of thyme or rosemary under the bacon before wrapping for an earthy flavor.
  • Prosciutto Swap: Replace bacon with thinly sliced prosciutto for a lighter option that crisps beautifully.

These Bacon Wrapped Scallops are the ultimate appetizer, combining the smoky, savory flavor of crispy bacon with the tender sweetness of scallops. With just a handful of ingredients and minimal effort, you can create an impressive delicacy that’s perfect for any occasion.

Ingredients

  • 16 large fresh sea scallops

  • 16 slices of bacon (thinner slices work best for wrapping)

  • 2 Tbsp olive oil

  • 1 Tbsp lemon juice (optional, for added flavor)

  • 1 tsp garlic powder

  • 1 tsp paprika (optional, for smoky flavor)

  • salt and freshly ground black pepper, to taste

  • 3 lemon wedges

  • toothpicks, soaked in water for 20 minutes to prevent burning

  • 1 oz seafood cocktail sauce

Directions

  • Rinse the scallops under cold water and pat them dry with paper towels. If there’s a tough muscle on the side (the adductor muscle), peel it off and discard it.
  • Lightly cook the bacon in a skillet or microwave for a few minutes until it’s partially cooked but still pliable. This step ensures the bacon crisps up without overcooking the scallops. Drain the bacon on a paper towel.
  • In a small bowl, mix the olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Toss the scallops in the mixture to coat evenly.
  • Wrap each scallop with a piece of bacon, securing it with a soaked toothpick. If the bacon slice is too long, trim the excess.
  • Cook the Bacon-Wrapped Scallops
Oven: Preheat your oven to 400°F (200°C). Place the bacon-wrapped scallops on a baking sheet lined with parchment paper or foil. Bake for 15–20 minutes, flipping halfway through, until the bacon is crispy and the scallops are opaque.
Broiler: Place the scallops on a broiler-safe pan and broil for 6–8 minutes, turning once, until the bacon is crispy with parchment paper or foil. Bake for 15–20 minutes, flipping halfway through, until the bacon is crispy and the scallops are opaque.
Grill: Preheat your grill to medium-high heat. Grill the scallops for about 3–4 minutes per side, or until the bacon is crispy and the scallops are cooked through.
  • Remove the toothpicks and arrange the scallops on a serving platter. Garnish with chopped parsley or a drizzle of lemon juice if desired. Serve with a side of seafood sauce for dipping.

Notes

  • This recipe serves four to eight (four to two pieces per person, depending on how many other mains and sides it is being served with).
  • I find that precooking the bacon in a skillet rather than the microwave produces a nicer end product, since the skillet provides a touch of caramelization that the microwave can’t. Just don’t overcook or it won’t wrap nicely!

Why You’ll Love This Recipe

Bacon-wrapped scallops hit all the right notes: smoky, savory, sweet, and succulent. They’re easy to make, require minimal cleanup, and taste like something you’d find at a high-end restaurant.
