Ingredients

  • 2 lbs chuck roast or beef stew meat, cut into 1.5-inch cubes

  • 3 Tbsp flour

  • 2 Tbsp olive oil

  • 1 large onion, diced

  • 3 garlic cloves, minced

  • 4 medium carrots, peeled and cut into thick slices

  • 3 medium potatoes, peeled and cubed

  • 2 celery stalks, sliced

  • 3 Tbsp tomato paste

  • 1 Tbsp Worcestershire sauce

  • 1 can (440 or 500 ml) Guinness beer (preferably draught)

  • 3.5 c beef broth

  • 2 bay leaves

  • 3 sprigs fresh thyme (or 1 teaspoon dried thyme)

  • 1 tsp paprika

  • salt and black pepper to taste
