Ingredients

  • 3/4 c granulated sugar

  • 1/3 c soft margarine

  • 1 egg

  • 2 tsp grated lemon rind

  • 3 Tbsp lemon juice

  • 1/3 c milk

  • 1.25 c flour

  • 1 Tbsp poppy seeds

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/3 c 2% yogurt or light sour cream

  • 1/4 c icing sugar (for glaze)

  • 2 Tbsp lemon juice (for glaze)

Directions

  • Preheat oven to 350°F (175°C).
  • In a large bowl or food processor, beat together sugar, margarine, egg, lemon rind, and lemon juice. Add milk and mix well.
  • In another bowl, combine flour, poppy seeds, baking powder, and baking soda. Add to the wet mixture alternately with yogurt, mixing until just combined. Do not overmix.
