This potato and cheese soup recipe is the best potato soup to make when you’re craving something warm and filling. Easy to whip up, it’s the ultimate comfort food for chilly days.

Ingredients

  • 1 large (or 2 medium) potatoes, cut into small cubes

  • 1 small onion, chopped

  • 1 garlic clove, chopped

  • 1 Tbsp butter

  • 3/4 c grated cheese (half parmesan and half mozzarella is best)

  • 1/2 tsp oregano

  • 1 chicken bouillon cube

  • 1/2 tsp paprika

  • 1 c milk (approximately)

  • salt and pepper to taste

Directions

  • Caramelize onion and garlic in butter in a medium sized pot.
  • Add potato, bouillon, oregano, and paprika to the pot and add just enough water to cover the potatoes.
  • Cook until the potatoes are fork-tender, then puree using a blender.
  • Return to the pot on low heat and add cheese.
  • When cheese is fully melted, add milk until it reaches your preferred consistency (it may take less or more, depending on your preferences).
  • Heat, but do not boil. Serve alone or with your favorite toppings.
