During rhubarb season, I use as much fresh rhubarb as I can get my hands on. There’s something so satisfying about picking those thick, red stalks and knowing they’ll soon be transformed into something delicious.

But even the most enthusiastic baker can only use so much rhubarb at once. That’s why I always make sure to chop up the extra and freeze it for later use.

Freezing rhubarb is incredibly easy. Simply wash the stalks, chop them into bite-sized pieces (about 1/4 inch), and pop them into a freezer bag for longer storage.

Sometimes, I’ll cook the rhubarb down before freezing it, which helps save space and makes it super convenient for making rhubarb jam or strawberry rhubarb jam later in the year.

This easy and budget-friendly rhubarb loaf recipe is perfect for using up an abundance of fresh rhubarb. With simple ingredients and straightforward steps, you’ll create a moist, flavorful loaf that’s great for breakfast, dessert, or a snack

Ingredients

  • 4 c flour

  • 3 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp cinnamon

  • 2 eggs

  • 2 c white sugar

  • 1/2 c milk, soured with vinegar*

  • 1/2 c cooking oil

  • 1 tsp vanilla

  • 3 c diced rhubarb**

  • 2 Tbsp butter or margarine

  • 4 Tbsp sugar

Directions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9×5 inch loaf pans.
  • Whisk dry ingredients, except for the 4 Tbsp sugar, together in a large bowl.
  • Beat the two eggs together in a medium bowl. Add the remaining liquids, except the 2 Tbsp butter, and mix until blended.
  • Pour liquid mixture into dry ingredients and mix well.
  • Fold in diced rhubarb and mix until well distributed.
  • In a small dish, rub the softened butter and sugar together lightly.
  • Pour the batter into the prepared loaf pans and spread it out evenly, then sprinkle the tops with the butter-sugar mixture.
  • Bake at 350°F for one hour or until a knife inserted into the middle comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • *To sour the milk, mix 1 cup of milk with 1 Tbsp white vinegar and let sit for 5 minutes, then use as directed in the recipe.
  • **Slice clean rhubarb in approximately 1/4 to 1/2 inch slices; the bigger the slice, the more noticeable it will be in the cooked loaf.
