This means that the main ingredient in these delicious squares doesn’t cost me a penny. It’s a win-win situation: I get to create mouthwatering treats while keeping my grocery bill low.

The Beauty of Rhubarb Squares

I’ve already shared some of my favorite rhubarb recipes with you, like the classic Rhubarb Crisp and the wonderfully moist Rhubarb Bread. Now, let’s add another star to the lineup: Rhubarb Squares.

These squares are a perfect balance of sweet and tart, with a crumbly texture that makes them irresistible. They’re easy to make, budget-friendly, and, most importantly, loved by my family.

These Rhubarb Squares are a delightful combination of sweet and tart, featuring a crumbly, buttery crust and a tangy rhubarb filling. Made with simple ingredients like fresh rhubarb, sugar, flour, and oats, this budget-friendly recipe is perfect for summer gatherings or a tasty treat any time of the year.

Ingredients

  • 2 c flour

  • 1/2 c butter or margarine

  • 1/4 tsp salt

  • 1/2 c sugar

  • 1 egg, beaten

  • 1 tsp baking powder

  • 1.5 c sugar

  • 1/2 c melted butter or margarine

  • 1/2 c flour

  • 2 eggs, beaten

  • 1 tsp vanilla

  • 4 c rhubarb

Directions

  • Mix 2 cups of flour, salt, and baking powder together.
  • Add butter or margarine and blend in as you would for pastry dough.
  • Blend in 1 beaten egg with fork until crumbly.
  • Take out 3/4 cup for topping, and press the resting into a well-greased 9×13 inch baking pan.
  • Mix the rest of the ingredients in the order given, and pour onto the crumb crust.
  • Cover with remaining 3/4 cup of crumb mixture (you can also top this off with a sprinkle of sugar and cinnamon, if desired).
  • Place in an oven preheated to 350°F (175°C) for 50 to 60 minutes.
  • Remove from oven and allow to cool before cutting into squares.

In my household, these rhubarb squares are a hit. My family loves the unique flavor of rhubarb combined with the sweet and crumbly topping. They’re perfect for summer picnics, family gatherings, or just as a tasty snack to have on hand.

And because rhubarb is so plentiful, I make sure to freeze plenty of it so we can enjoy these treats even in the winter months. Just chop the stalks into pieces and then transfer them to a freezer bag. This way, you’ll have rhubarb ready to go for your favorite recipes all year round.
