Ingredients

  • 6 large russet potatoes

  • 1/2 c milk

  • 1/4 c heavy cream

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp garlic salt

  • 1/4 cup grated Swiss or cheddar cheese

  • 4 Tbsp melted butter

  • Your favorite baked potato toppings

Directions

  • Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and pat them dry. Prick each potato several times with a fork to allow steam to escape. Rub them with a little olive oil and sprinkle with salt.
  • Bake the Potatoes: Place the potatoes directly on the oven rack (you can put a baking sheet on the rack below to catch any drips). Bake for about an hour, or until the potatoes are tender when pierced with a fork.
  • Prepare the Filling: While the potatoes are baking, prepare your fillings. Cook any bacon, steam your broccoli, sauté mushrooms, etc. Shred your cheese and chop any fresh toppings.
  • Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a thin slice from one side of each potato and carefully scoop out pulp into a bowl, leaving about 1/4 inch shell.
  • Brush the insides and edges of the shells with melted butter, and return to the oven for about 6-7 minutes to crisp.
  • Beat the hot pulp of the baked potatoes with the milk, cream, salt, pepper, and garlic salt until light and fluffy.
  • Set crisped potato shells on a baking sheet and spoon in the filling. Brush tops lightly with melted butter and sprinkle with grated cheese and other cooked topping such as the steamed broccoli.
  • Bake for 15 to 20 minutes until golden brown.
